Cacc’e Mmitte di Lucera takes its name from an old local custom whereby a winemaking facility would be shared amongst growers on a daily rental basis and the grapes had to cacce (be taken out) of the vat and mmitte (put in) the press in preparation for the next grower. The DOC is almost exclusively in the commune of Lucera (province of Foggia) and the main variety is Nero di Troia, with smaller amounts of Montepulciano, Sangiovese and also the white grape Bombino Bianco allowed. The wines from the region can be big and rich but what sets Paolo’s wines apart is their elegance, finesse and absolute pleasing drinkability.

Paolo’s certified organic estate of grapes, wheat and tomatoes is located in Daunia in Northern Puglia. Paolo is well known throughout Italy, and the world, for producing the finest organic tomatoes from heirloom varieties. The vineyards, also organic certified, were planted in 1998 to local varieties Nero di Troia, Aglianico, Montepulciano, Bombino Bianco and a little Sangiovese.
